Prosody and ejabberd are the only servers worth a damn, but Prosody's a lightweight toy if you're expecting enterprise-grade muscle, and ejabberd's setup is a freaking nightmare unless you're an Erlang nerd.
Clients? Conversations on Android is decent, but its E2EE is overhyped - OMEMO ain't bulletproof, fam. Gajim on desktop is a clunky relic half the time, barely keeping up with modern XEPs. Federation is a buggy mess too; good luck with that hot garbage.
