Essentially, you convince the person that everything is done on their data, while in reality, you're the one who owns the domain. Later, when the site gains momentum, it can be transferred to another hosting provider. What's interesting is that the hosting provider who previously hosted the site ends up deleting everything, which makes it easier for you to take possession of the domain by registering with any email. However, this could lead to legal troubles down the road.
